Scientists at Nestlé have discovered a new sugar crystal. In a press release, Nestlé announced that this discovery will allow them to reduce the amount of sugar in their products by as much as 40% with no discernible difference in taste. The new sugar is expected to be initially used in their confectionary products starting in 2018.

Stefan Catsicas, Nestlé Chief Technology Officer, said “Our scientists have discovered a completely new way to use a traditional, natural ingredient.” Catsicas described the process as “groundbreaking research” and is “inspired by nature”.

The newly discovered sugar is in fact real sugar and not a sugar substitute like Splenda. The new sugar crystals dissolve faster than regular sugar, thus allowing for the delivery of the same sweet sensation while using less sugar.

More information on which product(s) that will have the new sugar is expected to be released sometime next year.

According to CNN, Nestlé declined to provide any details on how this may impact cost and calories since they are in the process of patenting their new discovery.
